Want to treat yourself to something extra special? This summer salad is the sort of thing you could expect to be served at a classy restaurant, and it’s worth every bit of effort that goes into making it! With bursts of sweet, juicy flavour, you’ll be savouring every mouthful.


• Butter Lettuce Leaves

• 2 Radishes, finely sliced

• 1 Cucumber, peeled and sliced

• Cherry tomatoes, halved

• 1 Spring onion, finely sliced

• 1 Stick celery, finely sliced

• Pomegranate pips

• ¼ Pineapple, diced

• 10 Prawns, peeled and grilled


Pineapple and Sweet Chili Salad Dressing

• 3 Tbsp. lemon-infused olive oil

• 1 Tbsp. pineapple vinegar

• 1 Lemon

• 1 Tsp. sugar

• 2 Tbsp. sweet chili sauce

• Salt, to taste

Watermelon, Feta and Mint Salad

Watermelon, mint and feta may sound like an unusual combination, but it’s super refreshing, and it’s just the type of salad you want on a scorching summer’s day. The salty taste of the feta works as the perfect complement for the subtly sweet watermelon.


• ¼ Watermelon, peeled and cubed

• 100g Feta cheese, cubed

• ¼ Cup pine nuts

• A Handful of mint leaves

• 1 ½ Tbsp. lemon juice

• 1 ½ Tbsp. olive oil

Strawberry, Peanut Brittle and Goats’ Cheese Salad

We would never have imagined that this combination of sharp, sweet and savoury flavours would work, but trust us when we say it puts most salads to shame! If you want to ‘wow’ your guests at a special lunch or braai, then this salad recipe is definitely worth trying out.


• 300g Rocket and watercress, rinsed and spun

• 2 Avocados, cubed

• 2 Cups strawberries, hulled and sliced into quarters

• 1 Cup peanut brittle, loosely crushed

• 1 Cup goats’ cheese, crumbled (you could substitute this with feta)

• 3 Tbsp. balsamic glaze

• Salt and Pepper to taste

The Balsamic Glaze

• ½ Cup balsamic vinegar

• 2 Tbsp. brown sugar
