Ingredients - Serves 4

  • 1 x finely chopped onion
  • 1 x leek
  • 1 x clove of garlic
  • 25g butter
  • 500g mixed mushrooms
  • 1 x tsp thyme leaves
  • 300ml vegetable stock
  • 150ml dry white wine
  • 300g Arborio risotto rice
  • 40g gorgonzola
  • A handful of parsley, to serve
  • A squeeze of lemon, to serve
  • A grating of parmesan, to serve

Dinner idea 2: Chicken Coq au Vin

Ingredients: Serves 6

  • 175g bacon
  • 1 x brown onion
  • 4 x garlic cloves
  • 2 x tablespoons olive oil
  • 30g butter, diced
  • 12 x free range chicken thigh fillets, halved
  • 2 x tablespoons plain flour
  • 1 tablespoon tomato paste 
  • 2 x cups dry red wine
  • 2 x cups chicken stock
  • 1 x medium carrot, diced
  • 300g brown mushrooms, halved 
  • 4 x fresh sprigs of thyme
  • 1-2 x fresh bay leaves
  • Chopped parsley, to garnish
  • Baby potatoes, to serve
