Beat The Heat With These 3 Easy And Delicious Popsicle Recipes

With summer hot on our heels, we’re ready to bring out the shorts, slops and shades!

But before we do that, we thought we’d brush up on our popsicle-making skills. After all, our time spent soaking up the sun and lazing around the pool wouldn’t be as enjoyable without a sweet frozen treat!

So to get started, we’ve picked a few unbelievably easy popsicle recipes, which only require a few ingredients, a popsicle mould and a bit of freeze time.

 

Enjoy Homemade Popsicles With These Great Recipes

1. Strawberry & Cream Popsicle

Ingredients:

  • 4 cups strawberries, sliced
  • 3 tbsp. water
  • 3 tbsp. sugar or honey
  • ½ cup whipping cream
  • ½ tsp. vanilla essence

Serving: Makes 10 popsicles

Method:

  1. Add the strawberries, water and sugar together in a small saucepan, and place this on the stove, over a medium-heat. Leave this to simmer for approximately 5 minutes.
  2. Wait until the strawberries are completely cooled before you puree the mixture.
  3. Blend the cream and vanilla essence together in a separate bowl, for around two minutes, and then fold the strawberry mixture into this. Now that the popsicle mixture is ready, you can pour it into the moulds, and leave this to freeze for a minimum of 4 hours.

2. Watermelon Popsicle Recipe

Ingredients:

Serving: Makes 10 popsicles

Method:

1. Mix the watermelon and coconut water together in a blender, or puree the ingredients with a stick blender.

2. Add the mixture into the popsicle moulds and freeze for around 4 hours.

3. Passionfruit Popsicle Recipe

Ingredients:

  • 1 ½ cups canned coconut milk
  • ¼ cup passion fruit juice
  • ¼ tsp. lemon or lime zest
  • 2 tbsp. sugar
  • 2 tbsp. passion fruit seeds

Serving: Makes 6 popsicles

Method:

1. Mix the coconut milk, passion fruit juice, lemon zest, sugar and passion fruit seeds together in a blender, or puree the ingredients with stick blender.

2. Pour this popsicle mixture into moulds and freeze for a minimum of 4 hours.
